Parmesan Roasted Broccoli



One vegetable I can always be sure my kids will eat, is broccoli. Odd, I know, but they love broccoli. Many times we've had company for dinner and they've been surprised by the kid's requests for "more broccoli". I've been blessed with children who love vegetables, but then again I love veggies, so I must be setting a good example, LOL. The other night the kids wanted broccoli with their dinner, but I was getting bored with the usual steamed broccoli with a touch of butter, sea salt and a lot of fresh ground pepper. So, I decided to try something new.




I had seen a post by someone on Pinterest about Parmesan Roasted Potatoes, which looked absolutely to die for. So, I thought why not make some roasted Parmesan broccoli. It only took about 10-15 minutes and the results were awesome!! The tender crisp broccoli had caramelized and the Parmesan had toasted. The result was a slightly sweet, nutty and salty combination. The kids gobbled it up and even Hubby had a large serving. Quick, easy and super yummy!!

Parmesan Roasted Broccoli

1 large head of broccoli, cut into florets
olive oil
sea salt
fresh ground pepper
1/2 tsp garlic powder
1/3 C Parmesan cheese

Preheat oven to 425 degrees.

Place broccoli on a rimmed baking sheet and drizzle with olive oil. Season with salt and pepper and using your hand, toss to coat. Carefully sprinkle each piece of broccoli with Parmesan and bake for 10 minutes. Turn the heat down to 350 and bake for 5 minutes longer, until broccoli is lightly browned and tender, and Parmesan is toasted.

Perfect! We love our veggies and oven roasted with Parmesan is the go-to recipe at our house. Cauliflower works great, too!

Looks yummy! Reminds me of the broccoli from Spaghetti Factory with the browned butter and Mizithra cheese! If you haven't had a chance to taste that, you're missing out!

I love roasting all kinds of veggies, especially broccoli which we enjoy often. I love your idea of adding Parmesan which for sure must add a nice touch to an already delicious dish.
