Scalloped Potatoes with Bacon


Tender Potatoes are layered with tangy cheese, onions and bacon and baked to perfection.


Sometimes being married to a Chef, has it's perks. Like this past Christmas. I got to enjoy visiting with family, rather than spending the whole day in the kitchen, because Hubby decided to cook for all of us. The feast was spectacular, but I think my favourite part was the scalloped potatoes. Though I am not sure exactly what ingredients were in them, I do know that they were very similar than these potatoes I am sharing with you today.

These potatoes are amazing. So amazing, that I really don't know what words to use, to describe them. Spectacular, astounding, stupendous, marvelous..... all of these words come to mind. But if Mr.B says that they are pretty much the best potatoes he's ever eaten, then you know they have to be good. He just doesn't dish out compliments like that for any old dinner. It has to be a REALLY good one, LOL. I used my Pampered Chef slicer (set to #2) and loved how easy it was to get perfectly, evenly sliced potatoes in a short amount of time!




Scalloped Potatoes with Bacon

6-8 medium Yukon Gold potatoes, thinly sliced
1 medium onion, thinly sliced
4 green onions, chopped
1 lb bacon, cooked and crumbled
3 C Swiss cheese, shredded
2 tsp fresh thyme
salt and pepper
3 C whipping cream
1-2 C milk

Preheat oven to 350 degrees. Generously butter a 2 1/2 qt casserole dish.

Completely cover bottom of casserole dish with one layer of potatoes (overlapping slightly). Season with salt and pepper and 1 tsp fresh thyme. Sprinkle with thinly sliced onion, 1 C of cheese, 1/3 of the crumbled bacon and 1/3 or the green onions. Repeat layers, but do not season the second layer of potatoes.

Slowly pour cream around edges of casserole dish to evenly distribute the cream. Slowly add 1-2 C of milk, pouring around edges of potatoes, until liquid comes 3/4 of the way up the potatoes. Cover and bake for 2 hrs; until potatoes are tender. Remove cover and cook 30 minutes; until the top is bubbly and browned. Let sit 20 minutes before serving.
