Guacamole with Bacon

Avocados use to be one of those things I'd look at in the store and think, what the heck is it. Years ago, it was associated with anything uber healthy and let's face it, though I try, I'm not into the whole raw/clean eating thing. Sure, I try to eat fresh fruits and veggies, but give me butter, ooey cheese, bread, peanut butter. Then one day Hubby and I went to one of his co workers house for a BBQ and they had a wonderful guacamole with chips to snack on. I went for it and survived, but that still didn't convince me to start buying it, LOL. Then 3 yrs ago, I had surgery that forever changed my life. The result was that I needed to eat a diet with increased sodium and potassium. I did some research and found out that avocados are a great source of potassium, so I bought some. At first I was mashing it and mixing it with mayonnaise, to use as a spread for sandwiches. But soon after I was putting it in salads, on sandwiches and making my own guacamole.

Yesterday I saw my friend Bernadette, from Rants From My Crazy Kitchen, share her Spicy Guacamole with Bacon. I had 3 avocadoes I desperately needed to use up, so I decided to make it, to go with our grilled shrimp for dinner. I have to tell you that the kids DO NOT eat avocado. They've tried it a few times, but can't seem to aquire a taste for it. Until last night! The devoured the guacamole and chips! Queenie kept asking me what was in the guac and I kept telling her it was avocados. She kept on eating, saying avocado never taste this yummy before, LOL. I loved the salty smoky bacon in the creamy avocado. I did leave out the jalapeno, because I wanted the kids to be able to enjoy it and I'm so glad they did! You can find Bernadette's recipe here. I will sharing the recipe I did for 3 avocados.

Guacamole with Bacon

3 avocados
7 slices of bacon, cooked and crumbled
1/4 of a purple onion
2 Tbs mild salsa
zest of 1 lime
juice of half a lime
salt and pepper to taste

 I used my Pampered Chef Manual Food Chopper for this and threw everything in there and processed until it looked the way I wanted it to. First I finely chopped the onion, then I added the remaining ingredients (expcept salt and pepper) and processed until almost smooth. Season with salt and pepper and pump the handle 2 more times, to combine. Serve with chips

If you do not have a MFC, mince the red onion and place in a bowl. Add the avocado and using a fork, mash it well. Add in the chopped bacon, lime juice, lime zest and salsa and stir well to combine. Check for seasonings, adjusting salt if needed and season with pepper. Stir to combine and serve with chips.

The first time I really fell in love with Avocados we were newly married & went to friends home for dinner. She had as an appetizer avocado half with crab salad...that was 50 yrs ago & I love them on & in everything. When I was little I had neighbor girls that would bring out half avocado just for snack. I had to ask what it was! Adore spicy guac. too.
