Guest Blogger~ Jo and Sue

Today I have some very talented fellow Canadian bloggers, sharing a wonderful recipe with you. Thank you so much, Jo and Sue!!

First I want to say thank you to Cindy do having us as guests today. Sue and I are honored to be sharing here at Hun...What's For Dinner? Sue and I are twins from a small town in the mountains in British Columbia. Our blog -http://joandsue.blogspot.ca/- is full of some easy, some not-so-easy, some healthy, some not-so-healthy recipes. Sue and I wanted to share a pasta salad recipe that is perfect for BBQ season. Plus...it looks really pretty so everyone will think you are super creative with your pasta salad instead of just tossing it all in a bowl. (We're all about creating the illusion that we are super geniuses in the kitchen!)

Layered Pasta Salad

Dressing
1 cup mayo
1/2 cup sour cream
2 tsp mustard
1 tsp dried chives
salt & pepper
2 Tbsp dried parsley
1 Tbsp fresh dill
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp onion, finely diced

Salad
1/2 cup spinach leaves, torn
2 - 3 cups pasta, cooked
1 orange pepper, diced
1 cup peas, cooked
1/4 cup cheddar cheese, shredded

Directions
In a glass bowl, layer your spinach, then 1/3 of your pasta, then the orange pepper, then the peas, then the rest of the pasta.

Spread your dressing on top of the pasta (you don't have to use all of it if you don't want to - but you will want to use at least 3/4 of it.)
Sprinkle with cheese. Cover and let chill at least 3 hours before serving. 





It's that easy!

You can, of course, add your favorite vegetables to the layers. Our bowl was a giant martini glass so it tapered quite a bit. If your bowl is then same width at the top as it is at the bottom, you may need a bit more pasta and spinach for the bottom layers. Oh...and... you can make the dressing even easier by simply mixing the mayo and sour cream with prepackaged Ranch dressing powder. We hope you like our spin on how to fancy up a pasta salad.
