Homemade Meatballs and Pasta Sauce

The kids have anxiously been awaiting the cooler weather, so we could have some of their favourite dinners again. Like spaghetti and meatballs! I've always made my own meatballs, but usually I throw them into some of our favourite store bought sauce. This time around though, I didn't have any jarred sauce, so I made my own. Making your own marinara/pasta sauce isn't difficult, I just use already made for convenience. Since I was home all day, I knew I had the extra few minutes I needed for the extra sauce.

I really love how tender the meatballs become, after simmering in the crock pot all day. Not to mention that the results are a fabulous meal, without feeling like I've spent all day in the kitchen. I usually make a large batch of meatballs, so we can have spaghetti the first night and meatball subs the next. The subs are as simple as taking sub rolls, slathering the insides with sauce, placing some meatballs in the center, sprinkling with cheese (we like a mixture of mozzarella and Havarti) and placing under the broiler to toast. Two meals out of one dinner, how can it get better than that?

Homemade Meatballs and Pasta Sauce

2 lbs lean ground beef
2 egg
1/3 C bread crumbs
2 tsp garlic powder
1 tsp oregano
2 tsp Italian seasoning
1 tsp onion powder
1/4 C grated parmesan cheese
salt and pepper

1 14.5 oz can crushed tomatoes
1 14.5 oz can Italian stewed tomatoes
1 8 oz can diced tomatoes
1 small onion, peeled and cut in half
4 cloves garlic, peeled and smashed
1 Tbs Italian seasoning
2 bay leaves
1 piece (about 1 inch) Parmesan rind (1/4 C grated Parmesan if you do not have rind)
salt and pepper

In a large bowl, mix together the ground beef, eggs, bread crumbs, Parmesan, garlic& onion powder, Italian seasoning, oregano and salt & pepper. Mix well to combine. Form meat into golf ball sized meatballs and place in an 8 qt crock pot.

Process the stewed tomatoes in a food processor, until smooth. Place processed tomatoes in a medium bowl, with diced tomatoes, crushed tomatoes, Italian seasoning, salt and pepper. Pour over meatballs in crock pot. Gently nestle the onion halves, smashed garlic and bay leaves into the sauce (among the meatballs). Cover and cook on low heat for 8 hrs. Fish the onion, garlic and bay leaves out, before serving. Serve with hot past, or in sub rolls.

I've been looking for a new sauce recipe, I am definitely going to try this! The pictures of the Parmesan make it look sooooo good.

You really can't go wrong with kids and meatballs and spaghetti, can you?! I usually use jarred sauce for ease too, but your sauce is very do-able. Looks nice and thick too. Thanks for linking!
