Cottage cheese is not something I really grew up with. Dad wasn't and isn't a cheese eater and Mom preferred cheddar. It wasn't until my sister moved out and made a lasagna for us, that I tasted cottage cheese. That's what most people think of, when they hear the word cottage cheese.... OK, well not everyone, but Hubby at least, LOL. When I told him I wanted to create a recipe using cottage cheese his first two words were "make lasagna". Don't get me wrong, I LOVE lasagna, but I already have quite a few lasagna recipes on my blog. I wanted to make something I'd never posted before. Something I knew the whole family would go Ga-Ga for; Homemade Pierogies!
I made pierogies years and years ago, when I had just moved out of my parents house. It was really simple to make, but it did take a fair amount of time. With two consecutive snow day this week, I had tons of time to play in the kitchen. The key to making homemade pierogies is to get all your filling ingredients cooked and ready before getting to work.When we buy pierogies at the store, we always grab the bacon flavoured ones, so I knew I wanted bacon in these. Bacon, potatoes, cottage cheese and onions, doesn't that sounds amazing? After last night's dinner, Hubby commented that we will never have to buy frozen pierogies again. I told him that if he gives me a day's notice, that may just be able to happen, LOL. The filling was creamy, slightly salty and delicious! The dough crispy and tender. Perfect!
Potato, Bacon and Cottage Cheese Stuffed Pierogies
4 large yellow potatoes, peeled and cut into chunks
6 slices bacon
1 small onion
2 Tbs butter
1 C Gay Lea cottage cheese
1/2 C marble Cheddar, shredded
2 cups flour (extra for kneading)
1/2 teaspoon salt
1 large egg
1/2 cup Gay Lea sour cream
1/4 cup butter, softened and cut into small pieces
To prepare the dough, mix together the flour and salt. Beat the egg and add it to the flour, followed by the sour cream and 1/4 C butter. Mix until the dough forms a ball. Knead on a lightly floured surface, or in mixer; until the dough looses most of it's stickiness; 5-7 minutes. I used my stand mixer with the dough hook for this. Wrap the dough in plastic wrap and let rest in the fridge, for 20-30 minutes.
While the dough is resting, bring a pot of water to a boil. Season with a generous pinch of sea salt and add potato chunks. Cook until fork tender.
In the meantime, cook bacon by placing it on a parchment lined, rimmed cookie sheet and baking it in a 375 degree oven for approximately 10-15 minutes. Removed cooked bacon to a paper towel lined plate, to drain and cool. Finely chop bacon and set aside.
In a small skillet, melt butter over medium low heat. Add onions and cook until they become translucent; about 5 minutes. Let cool.
Once potatoes are cooked, drain them and return them to the pot. Roughly mash potatoes. Add the bacon, onions and cottage cheese, and mash until smooth. Scoop tablespoon amounts of filling, using a small scoop, into little balls and let cool.
Roll the pierogi dough on a floured surface, to 1/8" thick. Cut dough into circles using a 2" cookie cutter or drinking glass. Place a scoop of filling on each dough round and fold the dough over, forming a semi-circle. Press the edges together tightly; until the seam is hard to see.
Boil pierogies in salted water until they float to the top. Drain and lightly sautee in a skillet with olive oil, until lightly golden and crisp. Serve with additional sour cream, bacon and green onion.
