Gay Lea Whipped Cream is made with real cream, so no oily mousse here!
Valentine's Day is just around the corner. Just yesterday Mr.B and I were checking out the Valentine's at the store. I'll have to take the kiddos to purchase some, soon. I've already picked them up a few little things, from Hubby and I. We don't go all crazy for Valentine's day, but I do love a good holiday, as an excuse to make pretty food! And that's what I think of, when I think of Valentine's Day treats. Pretty. Oh, and don't forget whipped cream! Whipped cream has a way of making any dessert, or hot beverage, more special. That's why you can always find a can of Gay Lea Whipped Cream in our fridge. I love that it is made with 100% real cream, as opposed to edible oil, often found in other brands. The kids really loved this pre Valentine's Day treat. I loved that I was able to make this in the matter of minutes. They would be perfect for a nice dinner party, by making the chocolate bowls and cheesecake mixture in advance. Wait until the last minute to fold the cheesecake mixture with your Gay Lea Whipped Cream, so it stays nice and fluffy when dessert is served.
Strawberry Cheesecake Mousse
4oz (1/2 brick) light cream cheese, softened
1/2 C strawberry jam
1- 225g can Gay Lea Whipped Cream
1 C dark chocolate melting waffers
Valentine's Day sprinkles
additional Gay Lea Whipped Cream for garnish
4 small ballons
In a microwave safe bowl, heat the melting chocolate, in 30 minute intervals until partially melted. Stir until smooth. Inflate small balloons and wash round ends, rinsing well and drying with paper towel. Dip the rounded end of each balloon into the chocolate, making sure chocolate comes up 1/4 ways up the balloon. Immediately place on a parchment paper lined baking sheet. Place in freezer to set. Put any remaining chocolate into a zip top bag, snip a small hole in one end and use chocolate to make chocolate hearts and squiggles. Place shapes into freezer to set.
While chocolate is setting, place cream cheese and strawberry jam into a food processor. Process until thoroughly combined and smooth. Place in a medium mixing bowl and refrigerate until ready to serve.
Once chocolate has set, carefully snip a small hole at the top of each balloon, to deflate. Carefully remove balloon from the bottom of each bowl and return the bowls to the freezer until you are ready to assemble your desserts.
When ready for dessert, remove the cheesecake mixture from the fridge and add in 1 can of Gay Lea Whipped Cream. Gently fold cheesecake mixture with the whipped cream, using a rubber spatula. Once combined, remove chocolate bowls from freezer and pour equal amounts of mousse into each bowl. Garnish with additional Gay Lea Whipped Cream, chocolate hearts and squiggles, and Valentine's Day sprinkles. Serve immediately.
