Banana Split Banana Bread

Chocolate chips, maraschino cherries and pineapple bring this banana bread to a whole new level of YUM!

A while back, I was chatting with a few of my blogging girlfriends when Tampa Cake Girl mentioned she was making a Banana Split Banana Bread. I LOVED the idea of incorporating some of the ingredients used to make banana splits, into my banana bread. I mean how could chocolate, cherries and pineapple not make banana bread rock? I had a low key day, so I decided to try it. Let me tell you, Cydnee is a genius!! Check out her recipe on her blog here.

I used one of my favourite banana bread recipes and omitted the nuts, so that the kids could bring some in their school lunches. The kids REALLY loved this twist on banana bread. I mean, how could they not. Banana bread is awesome to begin with, but add some bitter sweet chocolate, sweet maraschino cherries and tangy pineapple, and it becomes a fabulous, moist, insanely delicious creation. And it looks really pretty too! I shared some of this banana bread with my girlfriend, since her mom LOVES maraschino cherries and she could not tell me enough how delicious it was. This is a great way to make ordinary banana bread, a bit more special.





Banana Split Banana Bread

2 ripe medium bananas, mashed
2 large eggs
1 3/4 C all purpose flour
1 1/2 C sugar
1/2 C vegetable oil
1/4 C buttermilk
1 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1/3 C maraschino cherries, chopped
1/2 C fresh pineapple, finely chopped
1/2 C semisweet chocolate chips

Preheat oven to 325 degrees. Butter a 9x5x3-inch metal loaf pan and line with parchment paper. 

Whisk bananas and eggs in a large bowl to blend. Add flour, sugar, vegetable oil, butter milk, baking soda, vanilla and salt; stir to blend well. Fold in cherries, pineapple and chocolate chips. 

Transfer batter to prepared pan. Bake bread until top is golden brown and splits slightly and tester inserted into centre comes out clean, about 1hr and 20 mins. 

Cool in pan on rack 20 mins. Turn bread out onto rack and cool slightly. Serve warm or at room temperature.
