Hubby and I are all about dip. Anytime we go out to eat, we get some sort of dip, as an appetizer.  Most restaurants offer Spinach Artichoke dip, so we've had just about any variation you can make. Last summer, I attended a blogger event at Summer Fresh and they sent us home with the most fabulous kale dip. It was slightly sweet, creamy and delicious. Well, I haven't been able to find the kale dip in any of our grocery stores, so I decided to make a Kale Artichoke Dip.

It basically is the same as a spinach artichoke dip, but using kale in place of the spinach. I made ours using cream cheese, which is a base I enjoy in warm dips. This is a very simple dip, yet it's so addictive. I served it with some toasted Naan bread, pita chips and tortilla chips. The kids even ate some, which is very surprising since they are always so leery of trying green foods. This is the dip that inspired the Kale Artichoke Pasta I shared with you last month. We loved this dip so much and I was constantly craving it, that I decided to turn it into a pasta dish. It's creamy, savoury and full of gooey cheese.

Kale Artichoke Dip

1 bunch kale, washed, chopped and ribs removed
3 Tbs olive oil
3 cloves garlic, minced
4 oz cream cheese
1/3 C sour cream
1/4 C mayonnaise
1- 14 oz can artichoke hearts, drained and chopped
1/2 C Parmesan cheese
1 1/2 C Mozzarella cheese, grated
1/4 tsp salt & pepper

Preheat oven to 350 degrees.

Heat oil in a large skillet, over medium heat. Add in washed kale and toss to coat with oil. Cook for 1 minutes. Once kale starts with wilt, add in minced garlic and season with salt and pepper. Cook until soft; about 3 minutes. Let cool.

In a microwave safe mixing bowl, add the cream cheese, sour cream, mayonnaise and 1 C mozzarella cheese. Cook in microwave for 45 seconds and stir until smooth. Stir in Parmesan, kale and artichoke hearts. Pour into an oven safe dish and sprinkle with remaining 1/2 C mozzarella. Bake for 10-15 minutes, until cheese on top begins to slightly brown.
