Oh Spring, will you ever stay? We had a few gorgeous days last week, where we didn't need to turn the furnace on (yay on cheaper gas bills!), but they didn't last very long. This week we've just been hovering above and dipping below the freezing mark. So, I took the opportunity to make a ham with all the fixins for one last time, before the hot weather gets here (assuming we will have a summer this year.....). Another reason I made a ham dinner, was because the kids and I will be celebrating Easter with my Mother in law this year. Hubby will be working (which is usually what happens when one works in the restaurant industry) and the kids and I really want to meet the newest addition to our extended family. We'll be spending our Easter break in the U.S with MIL and meeting my new niece. But I digress...... back to our ham dinner!

I was really looking forward to sitting down to our ham dinner, which got me thinking about dessert. Yes, I'm the girl who chooses her dessert first, when we go out to eat. How else will I know how much to eat and what to bring home, LOL. Hubby always seems to gravitate to apple type desserts when we go out, so I decided to treat him to an apple crisp. It was his day off after all, and he's been working that cute little hiney off lately. What I love about apple crisp, is that it is such a good dessert, but it's crazy how easy it is to make. Apples, sugar, butter, cinnamon.....Ingredients I always have in my house. Plus we had vanilla ice cream in the fridge! What goes better with warm apple crisp, that ice cream? I just love how it melts and mingles with the spiced apples and crunchy topping.

Super Simple Apple Crisp

6 large apples (I used a combo of MacIntosh and Red Delicious)
3 Tbs brown sugar
1 tsp cinnamon
pinch of cloves
1/2 tsp vanilla
3/4 C sugar
1/2 C butter
3/4 C flour

Preheat oven to 350 degrees F.

Peel, core and chop apples and place in a 9 inch square baking dish. Sprinkle apples with brown sugar, cinnamon, cloves and vanilla. Carefully toss to coat apples.

In a bowl, cream the butter and sugar. Blend in the flour and sprinkle mixture evenly over apples. Bake for 30-40 minutes; until apples are tender and crust is golden. Serve warm with vanilla ice cream, if desired.

This looks so good and makes me crave a big bowl of warm apple crisp with some vanilla ice-cream!!! It's one of my absolute favorite desserts, and yours looks so wonderful!
