Tex Mex Perogies

Crisp bacon flavoured perogies are topped with a blend of cheeses, salsa and avocado, for a wonderful Tex Mex twist.

Mr. B and Hubby are crazy about perogies. Any time we are grocery shopping, Hubby puts a bag of perogies into the cart. It doesn't matter if we already have some at home, he buys more. There is just something about these bundles of dough and potato, that is addictive. We usually eat our perogies loaded up with cheese, bacon and sour cream. This time I decided I wanted something different and went the tex mex route with them. We like our perogies crisp, so I boil them first, then fry them until crisp.

I was in the mood for nachos, but we were out tortilla chips, so I thought perogies would taste wonderful topped with salsa and avocado. Boy was I right! The perogies were crisp and creamy, topped with salty cheese, spicy salsa and creamy avocado. This is a really good and filling meatless meal.

Tex Mex Perogies

2 pounds of perogies (about 30)
2 Tbs olive oil
1 Tbs butter
1/2 C Colby Jack cheese, grated
1/4 c marble cheddar, grated
salsa (we used medium salsa)
2 avocados, chopped
juice of 1 lime
1/2 tsp chili lime seasoning (Pampered Chef)
1/4 tsp cumin
1/4 tsp salt
sour cream

Bring a large pot of salted water to a boil. Add in perogies and reduce heat. Simmer until centres are heated through; about 3 minutes after the perogies float to the top of the water. Drain

Preheat broiler.

In a large skillet, heat the oil and butter over medium high heat. When the butter begins to bubble, add in the perogies and cook until lightly browned; about 3 minutes. Turn and cook for an additional 3 minutes. Transfer to an oven safe dish and repeat with any remaining perogies.

Sprinkle cheese over the fried perogies and place under broiler until cheese is bubbly.

In a small bowl, toss chopped avocado with lime juice, chili time seasoning, cumin and salt. Set aside.

Serve cheesy perogies with salsa, sour cream and avocados.
