Last week, while I was at the Dollar Store, I found these super cute disposable loaf pans. I quickly threw two of the many patterns into my cart, and continued my shopping. When I came home, I was so excited to try them, but I didn't know what to make with them. I had some blueberries and raspberries in the fridge that were soon to go bad, so I decided to make some lemon berry bread. I remembered seeing the most amazing Lemon Blueberry Bread, over at Moore or Less Cooking Blog, so decided to use my friend Nettie's recipe as a guide. I did make a few changes, but I pretty much stuck to the recipe.

Holy YUM is all I can say! The bread was fantastic. Moist, tangy and sweet. Since my disposable loaf pans were smaller than a regular loaf pan, I ended up with 5 loaves. I kept one, and brought the other 4 loaves to school. There was only 2 days of school left, and thought the teachers would enjoy a little treat. Queenie's teacher knew right away who had left the goodies in the staff room and quickly found me to tell me how yummy the lemon berry bread was, LOL. Mr. B and I really enjoyed the bread, while Queenie said she loved it, but only had a few nibbles. Hubby isn't much of a dessert guy, so he missed out on something spectacular. This is a great way to use up those gorgeous summer berries!

Lemon Berry Loaf

1/2 C butter, room temperature
1 C sugar
2 eggs
1 tsp lemon extract
1 tsp vanilla
1 C sour cream
juice and zest of 1 lemon
2 C flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 C blueberries
1/2 C raspberries

glaze:
1 C powdered sugar
1 tsp lemon extract
1/2 tsp lemon zest
1 tsp lemon juice
1 tsp milk (more if needed)

Preheat oven to 350 degrees F.

In a large bowl, beat the sugar and butter until light and fluffy. Beat in eggs, lemon extract, vanilla, sour cream, lemon zest and lemon juice. In a separate bowl, sift together the flour, baking powder, baking soda and salt. Mix the dry ingredients into the wet, mixing until just combined.

Gently fold in 1/2 C blueberries and all the raspberries. Pour into a greased 9x5 loaf pan (or fill disposable loaf pans, half full with batter) and sprinkle with remaining blueberries. Bake for 55-60 minutes (20-30 minutes for smaller loaves); until a toothpick inserted into the center comes out clean. Let bread cool in pan for 10 minutes, before removing it to a cooling rack, to cool completely (if using cute disposable pans, let the loaves cool completely in the pans).

In a small bowl, combine the powdered sugar with the lemon extract, lemon zest, lemon juice and milk (adding more milk if needed). Drizzle glaze over cool loaf. Let set and drizzle any remaining glaze over the loaf once more.
