Well, it's been a LONG time since I've done a What's for Eats? on my blog. I'd like to say that life just got in the way, but I really think I just got lazy. This past school year was very busy. I decided to be more active in our school council and to take on a few more responsibilities. That paired with helping in both Mr.B and Queenie's classes and at the start of this year volunteering with Hubby to organize the end of the year carnival, left me with little time to myself. So, I gave up meal planning, to have a few extra hours to myself a week. Boy let me tell you, our grocery budget sure did feel it and I found myself making easy, not so homemade meals, several times a week. I don't like that it went downhill so fast, and now that summer is back and I can recharge my batteries, I am ready to try it again.
Another reason I gave up meal planning is that the price of food, especially meat, is becoming ridiculously expensive. And as a result, we've been eating more low cost, not so good for you foods. I mean seriously, I spent $15 today, on a pack of 6 pork chops, AND they aren't even a good thick cut!! While the kids loved their frequent pancakes, waffles, chicken finger dinners, I felt more and more guilty that I wasn't feeding them wholesome foods. I am hoping that with meal planning I can find new creative ways to stretch the meats we can purchase and to increase our vegetarian meal options.
So, I've decided to start a linky party that is all about Meal Planning. This way I can get some tips and ideas from other bloggers, who also meal plan each week.
Here's the plan for this week
- Grilled chicken breast with a beet salad (new recipe)
|Boy Scout Potatoes|
- Grilled pork chops with Boy Scout Potatoes and mixed grilled veggies
- Garlic Scape Pesto Stuffed Chicken Legs Wrapped in Bacon (new recipe), with grilled mushrooms and peppers
- Grilled Veggie Quesadillas
- Maple Lime BBQ Ribs with potato salad
