Camping Food: Homemade Pancake Mix

Make light and fluffy homemade pancakes, even when you're roughing it. This homemade mix is perfect for camping!

It's becoming a summer tradition to go on a camping trip. Now when I say camping, I mean camping. A tent, sleeping bags, cooking over the fire, or a small camping stove. No trailers, or cabins for this family! Let me tell you, by the end of our 10 days I was dreaming about my nice soft cozy bed. But we did have an amazing time!!

When thinking of what food we wanted to bring with us, the kids requested pancakes for breakfast. Since they aren't fans of boxed pancake mix, I had to think of a way to bring what I needed to make pancakes, without bringing half my pantry. I decided to use my go to pancake recipe, mixing all the dry ingredients in a large bowl and separating it into zip top bags. I then wrote the ingredients and measures needed to complete the batter, onto the zip top bags. Thankfully we always bring milk with us when camping, but if we didn't I simply would have added some dried milk powder* to my dry ingredients.

We go all out with camping food. Bacon and eggs, french toast, chicken and baked beans, are just a few of our camping meal must haves. I pack my trusty cast iron skillet and my new cast iron griddle and we can make just about anything. I am secretly lusting for a cast iron dutch oven though. Imagine the chicken and dumplings, or stew that we could have!! We indulged in some fantastic Cajun Chicken Breasts and Brown Beans, cooked over the fire for dinner one night.

Just because you're roughing it in nature, doesn't mean you have to eat like your roughing it. With the right equipment and a few tricks (like this homemade pancake mix), you can eat like a king, giving you the energy needed for all the fabulous outdoor adventures that await!

Homemade Pancake Mix
makes 2 batches of pancakes

3 C flour
1/4 C sugar
6 tsp baking powder
1 tsp salt
* 6 Tbs powdered milk (if you don't want to bring milk with you)

Mix everything well in a mixing bowl. Separate evenly into two medium sized zip top freezer bags. Label bags with remaining ingredients needed to make pancakes. When you'd like to make the pancakes, pour the pancake mix into a mixing bowl and make a well in the center. Add the egg, oil and milk/water (most days 1C of milk is enough, on other days I need more. Use your judgement and add more milk if batter is too thick). Whisk until combined (lumps are OK). Alternately you can place the dry mix and wet ingredients in a leak proof jug and shake until combined. Cook in a cast iron skillet, or a cast iron griddle, on your camp stove.

Pour small amounts of batter onto your griddle. Cook until bubbles form and edges begin to firm up; about 2-3 minutes. Flip and cook for an additional 2 minutes; until golden brown.

remaining ingredients (per zip top bag):
1 egg
2 Tbs oil, or melted butter
1 C milk (or more depending on how packed your flour was when measuring)
 *same equivalent of water, if using powdered milk

i just made these this week for camping. ur recipe is way off. i needed way more than one cup of milk. the batter was as thick as pie dough consistency. will def not use this recipe again

Most of the time 1 C of milk is enough, but there are times more is needed. Sorry you did not like the recipe
