Mommy's Cherry Coconut Milkshakes

Fresh cherries and vanilla ice cream are joined by coconut rum, in this deliciously fun adult beverage.

It's summer time and this month some of my blogging buddies and I thought it would be super fun to do a summer time drink round up. So, for the past week, we have been sharing 3 drink recipes (with 3 recipe this week) perfect for summer!

I don't indulge in alcohol, or wine, that often and I don't care for beer. But once in a while, after a long hard day, or while visiting with friends, or around a camp fire; I'll indulge and let my hair down. The thing I like about these milkshakes is that I can indulge even when I don't want to be drinking spirits. Mind you the coconut rum adds an awesome flavour to these grown up drinks, but I like the "virgin" version of the drink too. And it's a great way to let the kiddos indulge. 

Mommy's Cherry Coconut Milkshakes

12 fresh cherries, pitted and chopped
1-2 (1.5-3 oz) shots of coconut flavoured rum (I used Malibu Rum)
3 large scoops of vanilla ice cream
whipped cream
toasted coconut
fresh cherries for garnish

In a blender place the cherries and coconut rum. Top with ice cream and blend until smooth. Pour into a large glass, top with whipped cream,toasted coconut and a fresh cherry. Enjoy and please remember to drink responsibly.

If you drink please do not drive!

Non alcoholic version: substitute 1/4 C coconut milk, for the coconut rum and add 1/2 tsp coconut extract.
