Pizza Muffins- Back to School Lunch Idea

These fluffy and moist muffins as studded with pepperoni and ham. Topped with pizza sauce and mozzarella.

Today is the day. The First Day of School!!! I am totally doing the happy dance inside, but by the end of the week, I'm sure I'll be in tears, missing Queenie. She's in grade 1 this year, which means she goes 5 days a week.

Last year, my friend Jeanine from The Baking Beauties, posted these amazing Gluten Free Pizza Muffins. They looked amazing and I thought it would be something Mr.B would enjoy. I had intended on making them, but life got in the way and I totally forgot about them. Until last week that is. Jeanine posted a photo of her muffins on her Facebook page and I decided then and there that I was going to make them for school lunches. I had pepperoni and mozzarella in the fridge, so off I went to make these awesome muffins.

At first, I wondered how to convert a gluten free recipe, to one using all purpose flour. I decided to replace the gluten free flour, with AP flour and to omit the xanthan gum. As I was mixing the dry ingredients, I knew these muffins would be amazing, since the herbs and spices smelled amazing! Once all the ingredients were mixed, I filled the muffin tin and topped with sauce and cheese. I may have went a tiny bit overboard with both, so when I make these again, I'll ease up a little, LOL. These muffins are AWESOME! Moist and fluffy, with crazy pizza flavour. Mr.B inhaled one and requested to have some in his lunch. So, I froze them in an air tight container and will pop a few in his lunches, when he requests them. Queenie, my non cheese eater, refused to even try them, so I'll have to find something else to put into her lunch box.

Pizza Muffins

2 C flour
3 Tbs sugar
1 Tbs baking powder
1/2 tsp baking soda
1 1/2 tsp Italian seasoning (I used half bell pepper seasoning and garlic & herb seasoning)
1/4 tsp salt
1 C cubed cheese (I used half sharp cheddar and half smoked monterey jack)
1 C sour cream
2 eggs
1/2 C low fat milk
1/4 C pepperoni
1/4 C chopped ham
pizza sauce (or favourite marinara sauce)
mozzarella cheese, shredded
green olives, or mushrooms, chopped (optional)

Preheat over to 375 degrees. Grease a muffin tin, or line with paper liners.

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, Italian seasoning and salt. Add in pepperoni, ham and cubed cheese; toss to coat. Set aside.

In a larger mixing bowl, whisk together the sour cream, egg and milk; until smooth. Add in the dry ingredients, mixing until just combined. Fill muffin tin 2/3 full with batter. Using a spoon, spread a tsp of pizza sauce over top the batter and sprinkle with a pinch of mozzarella. Add a few pieces of olives or mushrooms, if desired.

Bake for 12-15 minutes, until a toothpick inserted in the center comes out clean. Let cool in pan for 5 minutes, before removing to a wire rack. Let cool completely before freezing. Freeze in a single layer, on a cookie sheet; until frozen. Transfer to an air tight container and return to the freezer.

To send to school- take a few muffins out of the freezer and wrap in plastic wrap. By lunch time, the muffins will be thawed and ready to eat!

For your "non cheese eater" Just leave it off! Top with tomato sauce. If you want to be sneaky, you could add the cheese to the batter and see if she notices. LOL I too have a "non cheese eater" in my family. I learned to be creative. :)

These look so good! I've found that at $20.00 a pop for delivery pizza, we can make our own at home that are just as good and this one is one I will try. Thanks

I definitely wouldn't be able to turn down one of your pizza muffins - they look delicious. They are perfect for lunch boxes - it's a shame your daughter won't try them! Hope she enjoys the new school year :-)

Made these last night. I was thinking they would be for lunches, but once my husband saw them, he decided they should be for dinner. Loved them! Easy to make, tasty to eat. I made half with pepperoni for the husband, and half with chopped red pepper for me. Thanks so much for the recipe! Delish!
