Sweet & Sour Chicken- Secret Recipe Club

It's time for this month's Secret Recipe Club reveal! I love being part of a group of bloggers, who cook from each other's blogs and then blog about it. It's so exciting to see who had my blog every month and to see what recipe they chose to make! This month I was assigned to Sarah's Kitchen. Sarah is originally from Kent (in England), but she has been living in the U.S since 2002 and has even become an American Citizen. I love that Sarah is also celebrating 6 yrs of blogging, this year and that she also likes to plan her meals every week. Her blog is full of delicious recipes, ranging from English recipes, to French pastries. I had a lot of fun browsing her recipes, trying to decide which I wanted to make this month. I narrowed it down to Sticky Toffee Pudding Cupcakes, Processor Danish Pastries, Quesadilla Casserole and this Sweet and Sour Chicken. When I shared my picks with Hubby and the kids, they all agreed on the chicken. 

My family really likes the sweet and sour chicken balls, that I make using leftover chicken or turkey, so I wanted to see how this sweet and sour chicken compared to the battered version. I like that this recipe uses fresh chicken, so I can make it anytime we are in the mood for it, as opposed to when we have leftover chicken, or turkey. 

I started the chicken and decided to make a Lo Mein to accompany it, while it was in the oven. It gave me the perfect amount of time to prep my veggies, cook my noodles and fry everything together. The end result of the chicken was phenomenal! The sauce thickened as it baked in the oven and the chicken itself was so tender and juicy. Mr B had two servings of chicken and I could not help but have a few extra pieces, as I was cleaning up after dinner. Hubby was more than happy to eat the leftovers and said that the chicken was still tender after being reheated in the microwave. This would be a great recipe for a special occasion dinner, or a big family meal.

Hun... What's for Dinner? Sweet and Sour Chicken

Sweet and Sour Chicken
adapted from Sarah's Kitchen

3-4 skinless boneless chicken breast
2/3 C flour
salt and pepper
2 eggs
1/3 C oil for frying

1 C brown sugar
1/2 C ketchup
1/2 C white vinegar
2 Tbs reduced sodium soy sauce
1 1/2 tsp garlic powder
salt  and pepper

In a deep skillet, preheat the oil over medium heat.

Preheat oven to 350 degrees F.

Cut chicken into 1 inch pieces and season with salt and pepper. Place flour and eggs in separate shallow dishes. Coat chicken pieces in flour and dip in egg. Place in hot oil, and cook until chicken is golden, but not cooked through. Place browned chicken into a 9 x 13 inch baking dish.

In a bowl, whisk together the brown sugar, ketchup, white vinegar, soy sauce, garlic powder and a pinch of salt and pepper. Pour over the chicken in baking dish. Bake for 45 minutes, turning the chicken every 15 minutes, to coat with sauce.
