Apple Cinnamon Spice Bread~ Secret Recipe Club

It's time for this month's Secret Recipe Club reveal! I love being part of a group of bloggers, who cook from each other's blogs and then blog about it. It's so exciting to see who had my blog every month and to see what recipe they chose to make! This month I was assigned to Mostly Food and Crafts. Danielle is also a Stay at Home Mom, who loves to cook with her kids and loves crafts. Her kids are the same age as Mr. B and Queenie, so I was pretty sure they would love anything I chose to make. I found so many yummy recipes I wanted to try, on Danielle's blog, like Macaroni and Cheese Muffins, Bread Machine English Muffins and a super cute Jack-o-lantern Cheeseball; which I intend to make for us Halloween night. Since the kids and I recently went apple picking, I decided to see if Danielle had any apple recipes. This Apple Cinnamon Bread caught my eye and I knew I wanted this to be my pick for this months Secret Recipe Club.

This bread is so delicious that I ended up making it three times. Well, I was worried the first loaf was going to be a disaster, because I totally forgot to add the baking powder and baking soda (that's what happens when you try to catch up on Game of Thrones, while working in the kitchen!). I quickly added it in, before pouring the batter in the pan, but it was very thick and I wasn't sure it had mixed well. So, I decided to make a second loaf, to make sure I had one made properly for photos. Since the batter was a little thick the first time, I decided to add in a bit of apple cider. Well, I ended up bringing the second loaf to our PTA meeting, not having a chance to take photos. This loaf was SO delicious, that I knew I'd be back in the kitchen making a third loaf, to share with you guys today. 

The loaf is deliciously moist, studded with chunks of tangy sweet apples. The brown sugar adds a delicious deep warmth, along with the cinnamon. I love cloves in my apple recipes, so I decided to add some, along with a touch of nutmeg. Rather than sprinkle the top with additional sugar, I decided to make a glaze with some leftover canned vanilla frosting and apple cider. For the third loaf I tried reducing the apple cider, then adding the frosting, but the result was not as delicious as the first glaze. It also didn't thicken, like I thought it would, after cooling. Despite my failed attempt at a glaze, the bread is still delicious. So much so, that my mother in law (who is visiting for Thanksgiving), has had 3 slices in the few days she's been here, LOL.

Apple Cinnamon Spice Bread

1 1/2 C flour
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp salt
1/2 C white sugar
1/2 C dark brown sugar
2 eggs
1 tsp vanilla
1/4 C apple cider
1/2 C vegetable oil
1 1/2 C apples, peeled, cored and chopped (I used Nova Spy)

1/3 C vanilla frosting (I used Betty Crocker in a can)
2-4 Tbs apple cider

Preheat oven to 350 degrees F. Butter or grease a 9 inch loaf pan; set aside.

Combine the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, ground ginger and salt, in a mixing bowl.

In a separate bowl mix together the sugars, eggs, vanilla and oil. Add the dry ingredients to the wet and and mix until just about combined. Gently stir in the apples, making sure to not over mix. Pour into the prepared loaf pan and bake for 50 minutes, to an hour; until a toothpick inserted in the center comes out clean. Let cool 5 minutes in the pan, before removing to a wire rack to cool completely.

For the glaze, mix 2 Tbs of apple cider into 1/3 C of frosting. If too thick, add in more apple cider (1 Tbs at a time), until you reach a pour-able consistency. Drizzle over the cooled loaf, before slicing.
