Loaded Cauliflower Mashed Potatoes #GayLeaFoods

A fluffy combination of mashed potatoes and cauliflower, is topped with caramelized onion, cheese and bacon.

Wow, it's October already! Am I the only one who finds that each year passes more quickly? The kids are finally back into their school routines and we are preparing for the colder weather that is bound to come. In just a little over a week, it will be Thanksgiving here in Canada and this year, we have so much to be thankful for. We've been so blessed, with Hubby who has a job that allows me to stay home, to nurture my children and follow my passion. I am going on year 5 of being pain free, in regards to my Crohn's disease. I am blessed to be able to help at the kid's school, to be able to play with my children and enjoy their childhood pain free. We are blessed that everyone is healthy and that the kids are doing well in school. 

Most of all, we are blessed that Hubby will be with us this Thanksgiving. Being the wife of someone who works in the restaurant biz, you come to accept the fact that your other half will not be present for most holidays. This year we are lucky that Hubby has the day off! We will probably go hiking, and enjoy a quiet Thanksgiving dinner at home. I'm not quite sure about the menu, but I've been playing around in the kitchen trying new recipes that would fit with a roast turkey dinner.

This past summer, while visiting my mother in law, she made mashed potatoes that had cauliflower in them. I thought they were delicious and the kids didn't really notice the cauliflower, so I decided to play around with the recipe. I decided to add a ton of flavour to the dish, by using Gay Lea Sour Cream, rather than milk. I also topped the dish with some caramelized onions, bacon and Ivanhoe cheese. Spectacular!! The potato cauliflower mixture was smooth, creamy and slightly tangy. I loved the addition of the slightly sweet caramelized onion, and salty cheese and bacon. It really turned ordinary mashed potatoes into something extraordinary and special. Perfect for any holiday meal!

Loaded Cauliflower Mashed Potatoes

5 large potatoes, peeled and cut into cubes
1 1/2 C chopped fresh cauliflower
2/3 C Gay Lea Sour Cream
1/4 C (1/2 stick) Gay Lea Butter
1 tsp salt
1/2 tsp fresh ground pepper
2 small onions sliced
2 Tbs olive oil
1 tsp brown sugar
8 slices bacon, cooked and crumbled
3/4 C Ivanhoe Old White Cheddar, grated

Place potatoes and cauliflower in a large pot of water. Bring to a boil and season with a generous pinch of salt. Cook until potatoes are very tender; about 10-15 minutes.

While potatoes are cooking, heat the olive oil in a skillet over medium low heat. Add the onion and season with a pinch of salt. Cook, stiring occasionally, until onions become golden and tender; about 10-15 minutes. Sprinkle with brown sugar and toss to coat. Set aside.

Drain the cooked potatoes/cauliflower, and return to the hot pot. Add in butter and sour cream and using a potato masher, mash until smooth. Season to taste with salt and pepper.

Spread potato/cauliflower mixture into an oven safe dish and top with caramelized onions. Mix the crumbled bacon with the cheese and sprinkle evenly over the caramelized onions. Place under the broiler, until cheese is bubbly and brown; 3-5 minutes.

Each year really does seem to fly by more quickly, that is for sure! Love this recipe, Cindy. Your Loaded Cauliflower Mashed Potatoes look amazing. What a great way to include more vegetables in your family's diet.

What a wonderful idea to get the kids to eat their vegetables without really knowing it. This would be one of my Grammie's idea of a great recipe. It's sneaky, as she would say. :)
