Bacon Cheeseburger Meatballs~ Secret Recipe Club

It's time for this month's Secret Recipe Club reveal! I love being part of a group of bloggers, who cook from each other's blogs and then blog about it. It's so exciting to see who had my blog every month and to see what recipe they chose to make! This month I was assigned to Amy's blog- Amy's Cooking Adventures. As I read through Amy's About section, I instantly felt like were were kindred spirits. She is a Stay at Home Mom to two (with a Masters in Elementary Education and Reading), who loves to cook and bake, hates housework and LOVES dessert! If I didn't know better, I would have thought I was reading about me. 

I knew right away that I was going to find tons of awesome recipes that I'd want to try. I bookmarked Amy's Roast Chickpea Tacos (which I plan on making soon!), Sweet and Sticky Baked Chicken, Cosmic Brownies, Texas Roadhouse Sweet Yeast Rolls and these Bacon Cheeseburger Meatballs. I actually ended up making both the rolls and the meatballs.

I fell in love with the Texas Roadhouse when we moved to Tennessee. The first thing I think about, when I think of the TRH is their rolls. So when I saw a recipe for them on Amy's blog, I just HAD to make them. They are so light and fluffy and pillowy soft, with a nice sweetness. I did miss their sweet cream butter though, LOL. I accidently over baked mine a tad, due to chaos with the kids (I really need to remember to set a timer!).

I knew the kids would LOVE the meatballs, so I decided to make those too. My bacon monsters were excited at the thought of putting bacon into one of their favourites- meatballs. These meatballs are super good! I love the sweet onion flavour, paired with the smokey bacon and beef. They are nice and tender and the cheese just gets all bubbly and crisp on the outside. I served mine with mashed potatoes with gravy, and broccoli. I also garnished them with pickles and tomatoes, because that's how we like to dress our burgers. The kids inhaled these meatballs and both Hubby and I were happy to have leftovers for lunch the next day. 

Secret Recipe Club- Bacon Cheeseburger Meatballs on Hun... What's for Dinner?

Bacon Cheeseburger Meatballs
adapted from Amy's Cooking Adventures

1 small onion, chopped
6 slices bacon
1 lb lean ground beef
¼ cup bacon flavoured Ritz Crackers, crushed
2/3 C cheddar cheese, shredded
1 egg

Salt & pepper

In a large non stick skillet, cook the onion and bacon over medium heat, until bacon is crispy and onions begin to caramelize; about 10-15 minutes. Using a slotted spoon, remove bacon mixture from skillet, to a paper towel lined plate. Let cool.

Preheat oven to 450 degrees F.

In a large bowl, combine the ground beef, cracker crumbs, cheese, egg, salt and pepper and cooled bacon mixture. For ground beef mixture into 15 equal sized meatballs (a bit larger than a golf ball) and place in a 9x13 inch baking dish. 

Bake in preheated oven for 18-20 minutes; until cooked through. Allow the meatballs to set 5 minutes before serving.

Cindy, this is a fun post!! Amy has a great blog, so hard to chose from! Ironically we ate at Texas Roadhouse today! I can so relate to the yumminess of their rolls and butter! Awesome post!
