Caprese Pasta

Has anyone else noticed the price of meats going up? We sure have here in Canada, so I've been trying to make more meatless meals, to ease our budget. Since the kids love pasta, I've been browsing Pinterest to find some meatless pasta idea. I saw tons of pins, for Caprese Pasta which looked super yummy. So I decided I was going to try to make my own version. After all, Caprese salad is only tomatoes, basil and fresh mozzarella; all ingredients that go perfectly with pasta.

This pasta couldn't be easier. I decided to roast my tomatoes, because I love how they get all sweet, bursting to release their juices. While the tomatoes roasted, I cooked the pasta and worked on the sauce. Super simple with a touch of milk and some seasoned tomato paste. Once the tomatoes had burst, I added them to the sauce, along with some fresh basil. The whole meal came together in just under 30 minutes; perfect for week night dinners.

Caprese Pasta

1 box farfalle pasta
1 pint grape tomatoes
2 Tbs olive oil
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp garlic powder
a pinch of coarse sea salt
1/2 C milk
2 Tbs seasoned tomato paste
4 Tbs fresh basil, chopped
1 C (200g container) baby bocconcini,drained

Preheat oven to 400 degrees.

Cook pasta according to package directions, in a large pot of salted boiling water.

While pasta cooks, place grape tomatoes on a rimmed baking sheet. Drizzle with olive oil and season with dried basil, oregano, garlic powder and sea salt. Bake in oven for 5-10 minutes; until tomatoes begin to burst.

While tomatoes roast, combine the milk and tomato paste in a skillet and heat to a boil. Reduce to simmer and add in the roast tomatoes and 3 Tbs fresh basil. Simmer until pasta is cooked through.

Drain pasta and return to the pot. Add in the tomato sauce and bocconcini and toss to coat. Place in a serving dish and garnish with remaining Tbs of fresh basil, before serving.

Hubby made this recipe for me after I shared it with him on facebook. We used gluten free penne (that's all we had) and he put too much in so it was a little dry but I also loved the burst of tomatos.
