Mini Meatloafs

These deliciously cute mini meatloaves come together in a snap and are perfect for quick weeknight dinners.

It's comfort food season again and with it comes a food bloggers worst nightmare... early darkness! Early darkness means scrambling to get dinner done before the sun starts to set. That is, if there is even sun that day, LOL. Some bloggers invest in a lighting system for winter photos, or night time shoots, but I just do not have the space to store lights, let alone leave them set up somewhere. Anyway, about these meatloafs....

These meatloafs have changed my life. Hubby and the kids love meatloaf, but I'm not a big fan of how long it takes to cook. So, I decided to try and make mini meatloafs, using my square muffin tin. This would also work in a regular muffin tin. I whipped up our favourite meatloaf recipe and evenly portion them into my muffin pan and bake. In about 10-15 minutes, they are cooked through and delicious. Which makes getting dinner on the table a snap,

Mini Meatloafs

1 lb lean ground beef
1 small onion, finely chopped
1 egg
1/4 C Parmesan cheese
1/4 C Panko bread crumbs
3 Tbs ketchup
1 tsp oregano
1 tsp basil
1 1/2 tsp garlic powder
1/2 tsp coarse sea salt
fresh ground pepper
Ketchup

Preheat oven to 350 degrees F,

In a large bowl, combine the ground beef with the onion, egg, Parmesan, bread crumbs, ketchup, basil and oregano, garlic powder, salt and pepper; making sure not to over work the meat.

Using a medium cookie scoop, evenly divide the meat into a 12 count muffins tin. Even out the tops and spread an additional tsp of ketchup onto the tops.

Bake in preheated oven for 10-15 minutes, until cooked through and meat begins to pull away from the sides of the pan. Let rest 5 minutes, before removing from muffin tin.
