Caramelized Baked Chicken Legs~ Secret Recipe Club

It's time for this month's Secret Recipe Club reveal! I love being part of a group of bloggers, who cook from each other's blogs and then blog about it. It's so exciting to see who had my blog every month and to see what recipe they chose to make! This month I was assigned to Morsels of Life. Morsels of Life is a blog jam packed with easy recipes, that range from appetizers to desserts. Many of the recipes have an Asian flare to them, but there is a delicious variety sure to please anyone's palate. I've actually made the Caramelized Banana Bread, from Morsels of Life, for a different blogger challenge.




As I was browsing through recipes, I found a few that really caught my eye. I was immediately drawn to the Slow Cooker Pulled PorkCinnamon Muffins, Sundried Tomato Pesto Swirl Biscuits and the Caramelized Baked Chicken Legs. I decided to let the family decide which recipe they would like me to try and the kiddos chose the Baked Chicken Legs. Hubby would have also liked to try the Swirl Biscuits, so I've bookmarked them to try during the holidays.

This chicken was delicious! I loved how thick and sticky the glaze became, while baking in the oven. I basted the chicken legs every 10 minutes, while baking, to get them nice and coated. The kids really loved the sweetness of the chicken. Leftovers were super yummy, paired with Naan bread the following day.

Caramelized Baked Chicken Legs
adapted from Morsels of Life


2 lbs chicken legs
1/4 C olive oil
1/3 C low sodium soy sauce
2 tsp sesame oil
1 Tbs grated fresh ginger
1/4 C ketchup
2/3 C honey
3 cloves garlic, minced
fresh ground pepper
1/2 tsp salt
green onion tops, chopped (garnish)

Preheat oven to 350 degrees. Place chicken in a large baking dish and set aside.

In a bowl, combine the olive oil, soy sauce, sesame oil, ginger, ketchup, honey, garlic, pepper and salt. Pour mixture over the chicken legs, turning legs to coat evenly.

Bake for 50 minutes, to 1 hr, basting the chicken with the glaze every 10 minutes. Chicken should read 165 degrees F on an instant read thermometer, when inserted near the bone. Let rest 10 minutes and baste one last time with glaze, before transferring to a serving dish. Garnish with green onion tops.
