Broccoli & Ham Breakfast Scramble

Well it's a week into the new year and I would like to know- have you made a New Years resolution? I haven't. This year I decided I am not making a resolution. I always make one and keep it for about a month or two. This year I set a goal. I set a goal to eat a more balance and healthy diet. As a whole, my family doesn't eat foods that are overly unhealthy. Lately I have noticed that by the time dinner rolls around and I tally up what I've eaten during the day, I am seriously lacking fruits and vegetables. I make sure my kids get their 3-5 servings of fruits/veggies a day, but I am not making sure I get the same amount. One of the reasons I think, is because I've been skipping breakfast.

With all the hustle and bustle of getting the kids ready for school, I just don't have time to get any food into me. After dropping them off, I either run errands, or come home to do some blog work. By the time I'm done, it's way past 10 o'clock and I've yet to have a bite to eat. So my goal for 2015, is to start eating before 10 am and to include my 3-5 servings of fruits/veggies back into my diet, throughout the day. A little trick I started doing is having some pre chopped veggies, such as mushrooms, broccoli, red pepper; in the fridge, to make breakfast scrambles. I am also trying to cut down on my carbs, so no more bagels with tons of cheddar cheese for breakfast. I am eating more eggs (which have really gotten a bad rap over the years!) and making awesome scrambles packed full of veggies and protein.

This is one of my favourites. I love broccoli and eggs together. It is surprising how delicious it is.

Broccoli & Ham Breakfast Scramble (low carb)

Broccoli and Ham Breakfast Scramble

1 Tbs olive oil
1 Tbs butter
1 C finely chopped broccoli
2-3 slices black forest ham (from the deli counter)
2 green onions (white parts only), chopped
1 egg
2 egg whites
2 Tbs water
salt and fresh ground pepper, to taste
2 Tbs cheddar cheese

Preheat a large non stick skillet over medium heat. Add in the olive oil and butter. Once butter begins to sizzle, add the broccoli and green onion. Season with salt and pepper (just a pinch of salt, since the ham is salty). Cook until the broccoli is tender crisp; about 3 minutes. Add in the ham and cook while you whisk the eggs.

In a mixing bowl, whisk together the egg, egg whites, water and fresh ground pepper; until well combined. Add egg mixture to the skillet and let cook for 2 minutes; until egg on the bottom begin to set. Mix eggs up, creating curds and cook until all eggs are cooked through; about 2-3 minutes longer. Spinkle with cheddar cheese and serve.

Makes 1 serving
