Low Carb Pizza Crust

You'll never miss the carbs again, with this low carb pizza crust.

On our journey to eat healthier, Hubby and I have decided to cut down on the amount of carbs we are eating and also on our sugar intake. As we went through our day, we never really stopped to think about how much sugar was in the foods we ate, or what we were drinking. Soda was our big down fall and who could resist a glass of homemade sweet tea? Bread and pasta were staples in our diets and we often over indulged in our beloved foods. While we are not cutting out carbs completely from our diets (hello potatoes!), we've decided to cut down on the amount we are eating everyday. Simple changes like eating Rye bread rather than regular white or wheat bread, having 2 veggie options at dinner, instead of a veggie and a starch and making substitutes whenever possible. Which is the case with this pizza crust.

When chatting with a few blogging friends about our new dietary changes, my friend Nettie (over at Moore or Less Cooking Blog) shared this Low Carb Pizza Crust recipe she found over at Lucy's Diabetic Friendly Low Carb Meals. At first I was a bit skeptical of a low carb pizza crust. I was sure it was going to include weird flours I could only find at the health food store. I was pleasantly surprised to see that this pizza crust recipe uses ingredients everyone has at home. So when we had pizza night, this past weekend, I gave the crust a try.

I was very anxious to see if it would really work. Afterall, I had never had to spread my pizza dough in a cake pan before, to bake it, LOL. As it baked, I knew that it was going to be a hit. The smell of baking cheese was intoxicating. Once I topped it and returned it to the oven, I was excited to eat! The kids LOVED the crust, saying it had really great flavour. They couldn't even tell that it wasn't a bread type dough. I wasn't sure Hubby was going to like this low carb version; since he is the pizza king. I was very happy when he told me that he might actually prefer this crust, to our old yeast dough crust!

Low Carb Pizza Crust
adapted from Plain Chicken

4 oz cream cheese, softened
2 extra large eggs
1/4 C parmesan
1/4 tsp Italian seasoning
1 C mozzarella cheese, shredded
1 C tomato puree
1/2 tsp basil
1/2 tsp oregano
additional shredded mozzarella cheese for topping
favorite pizza toppings ( we had pepperoni, ham, olive and mushrooms)

In a bowl, combine the tomato puree with the basil and oregano. Set aside.

Preheat oven to 375 degrees F. Line a 9x13 inch baking dish with parchment paper.

In a mixing bowl, beat the cream cheese until smooth. Beat in the eggs, Italian seasoning and parmesan, until well combined. Stir in the mozzarella cheese. Spread cheese mixture evenly in prepared baking dish.

Bake for 20-25 minutes; until browned. Let cool completely on a wire rack. Place cooled crust on a parchment lined baking sheet. Spread with tomato puree and sprinkle with additional mozzarella, and desired toppings.

Bake once again in a 375 degree F oven, for 15 minutes; until toppings are bubbly.

This low carb pizza sounds delicious. I've been trying to cook low carb and sugars for a while now. It takes a little while to adjust but once you do it's definitely worth it. I'm always trying different low carb pizza, I will definitely give this a try. Pinning/sharing.

I make something similar, but I add a good hefty amount of cauliflower in it, too. Added fiber! :)
