Luck of the Irish Popcorn

This crispy popcorn has a great pistachio flavour and is full of St. Patrick's Day fun.

My kids LOVE popcorn. So when I was thinking of something fun to make, to share with my readers for St. Patrick's Day, I thought a green coloured popcorn would be fun. When trying to think of ways to turn the popcorn green, I thought of one of my favourite treats- pistachio pudding. I quickly researched to see if you could somehow coat popcorn with pistachio pudding and I found THIS recipe over on the Taste of Home website. I thought it would be a great way to make my popcorn.

This popcorn was super addictive and the kids LOVED the Lucky Charms marshmallows inside. I do wish it was a bit more green though, so I suggest adding 1-2 drops of green food colour to yours if you'd like. The green colour does show better in person, than in the photo, which is super frustrating, LOL. Regardless, this is a super fun way to celebrate St. Patricks Day.

Luck of the Irish Popcorn

10 C popped popcorn (I popped mine on the stove, but air popped is also good)
5 Tbs pistachio pudding mix (sifted to remove the pistachio bits)
1 Tbs butter
1/3 C light corn syrup
1 tsp almond extract
1 pinch of coarse sea salt
1- 1 1/2 C Lucky Charms marshmallows (just pick em out of the box!)

Preheat oven to 200 degrees F. Line a rimmed baking sheet with parchment paper.

Place the popcorn in a large bowl. Add the pudding mix, butter, salt and corn syrup to a small sauce pan and place over low heat. Whisk until the butter is melted and mixture is smooth and bubbly. Pour immediately over popcorn, tossing to coat. Spread popcorn out onto baking sheets and bake for 20-25 minutes, Stirring once; making sure not to brown the bottom.

Let cool and break into clusters. Once completely cooled toss in the Lucky Charms marshmallows. Keep in a large ziptop bag, or air tight container, for up to 4 days.
