Corn & Black Bean Salsa Dip~ Secret Recipe Club

Corn and black beans are combined with tomato and a creamy Tex Mex dressing, for a delightful appetizer.

It's time for this month's Secret Recipe Club reveal! I love being part of a group of bloggers, who cook from one another's blogs and then blog about it. It's so exciting to learn about a new blogger every month! I really enjoy seeing who had my blog and to see what recipe they chose to make! It reminds me of how many great recipes are on my blog and makes me want to go back and make many of them again. This month I was assigned to the blog Daily Dish Recipes. Nicole, is a Mom to 5 teenagers (yup you read that right- 5), who loves to write and just might live in a zoo. Her family has 4 dogs, two cats and a hedgehog. I can just imagine that there is never a dull moment in her household, LOL. When Nicole isn't in the kitchen or spending time with family, she is writing and scrapbooking. 

I absolutely LOVED browsing through Nicole's blog. It is jammed packed with any recipe imaginable. From appetizers and drinks, to entrees and desserts (and everything in between), Nicole's blog has it all. I bookmarked so many recipes to try this month. Like Chocolate Peanut Butter Bars, Strawberry Chocolate Mousse Cake, Buffalo Chicken Spring Rolls and  Cajun Grilled Shrimp Po' Boys. It really came down the weather when deciding which recipe to make. It's been HOT here lately, so I decided to make Nicole's Corn, Black Bean & Cilantro Salsa Dip

Since my family is small, I halved the recipe. I also omitted the cilantro (I'm not a fan) and subbed in a bit of parsley of colour, and used green olives rather then black. Queenie really enjoyed helping me whip this together. She loved tasting all the ingredients and smelling the spices. She was thrilled that it was the same flavours as her beloved tacos. This dip is fantastic! It has awesome Tex Mex spices mingling with sweet corn, tangy tomato and creamy black beans. This would totally be an awesome dip for tailgating, or while watching the big game on TV.

Corn & Black Bean Salsa Dip- Secret Recipe Club

Corn & Black Bean Salsa Dip
adapted from Daily Dish Recipes

1 (15 oz) can of sweet corn, drained
1 (15 oz) can of black beans, drained and rinsed
1 (14,5 oz) can diced tomatoes with green pepper, celery and onion, drained
1/2 C pimento stuffed olives (sliced)
1/2 C chopped red onion
1/2 C chopped parsley
1 orange bell pepper, chopped
2 avocado, cut into cubes
1/3 C sour cream
1/2 C mayonnaise
1/4 tsp garlic powder
1 tsp cumin
1 tsp chili powder
1 tbs lemon juice
tortilla chips (we used SCOOPS!)

In a large mixing bowl combine the corn, black beans, diced tomatoes, olives, red onion, orange bell pepper and parsley. 

In a small mixing bowl, combine the sour cream, mayonnaise, garlic powder, cumin, chili powder and lemon juice. Whisk until smooth.

Pour sour cream mixture over corn mixture and toss to coat. Gently fold in avocado. Refrigerate for at least 30 minutes and serve with tortilla chips.

What a great dip! Love the combination of corn, black beans and all those yummy spices. This would be perfect for a picnic or family barbecue.

I'm all for dips, especially homemade. This one is a nice combination of spices and "real" veggies and beans. It is so much fun to try out other bloggers' recipes:)
