Peanut Butter & Banana French Toast

Peanut butter and banana sandwiches are dipped in custard, for a delicious twist on French toast.

Every morning Mr B requests peanut butter toast for breakfast. Sometimes he pairs it with jelly, sometimes with honey. When he saw me eat a peanut butter and banana sandwich months back, he decided to try it. Now most weekends he makes himself a PB & Banana sandwich for lunch. Last weekend I decided to surprise him and pair his go to lunch with French toast.

The result was awesome! I mean peanut butter and banana sandwiches are good to begin with, but dip it in custard and fry it? HEAVEN! Not to mention a nice sweet drizzle of honey on top. Mr B said it was the best breakfast he's had in a long time. I think I'll take it as a challenge to up my weekend breakfast game, LOL. This makes a special weekend breakfast, or even a quick, easy and healthy dinner.

Peanut Butter and Banana Stuffed French Toast

Peanut Butter & Banana French Toast

8 slices of bread
2 medium bananas
1/3 C peanut butter (I used creamy)
2 eggs
1/4 C milk
1/4 tsp cinnamon
pinch of salt
butter for frying

Preheat a skillet over medium heat.

Place the slices of bread on a clean surface. Spread an even amount of peanut butter on each slice of bread.

Peel and slice bananas into 1/4 inch slices. Place banana slices on 4 slices of bread, which has been covered with peanut butter. Top with remaining 4 slices of bread, peanut butter side down.

In a shallow dish, beat the eggs with the salt and cinnamon. Whisk in the milk, until well combined.

Add a dab of butter to the hot frying pan. Dip one sandwich into the egg mixture and place in frying pan. Cook until golden brown (about 3 minutes) before flipping and cooking the second side until golden brown (about 3 minutes). Repeat with remaining sandwiches, adding more butter to the skillet when needed.

Serve hot, with your choice of honey, pancake syrup or maple syrup.
