Steak and Potato Salad

Grilled Creamer potatoes are tossed with tender juicy steak and greens, in this delicious entree salad.

With 4 days of school left, we are on the countdown to summer! The weather has been warm and sunny for the last month, which has made us long for the lazy days of summer. I LOVE summer. I love not having to be anywhere early in the morning, I love sitting outside with a good book, I love camping and eating alfresco. I love cooking on the grill and creating new delicious recipes.

That's why I've totally fallen in love with these BBQ Ready kits from The Little Potato Company. Their delicious Creamer potatoes now come ready for the grill. Prepackaged in a foil tin, simple remove the plastic cover, toss with oil and the seasoning packet and place on the grill. In 30-45 minutes, you have deliciously grilled Little Potatoes. Since I usually make my own foil packets for potatoes, I love that I can skip a few steps, with these BBQ Ready kits.

 What I love most about Creamer potatoes is that they are so versatile. Not only is there several ways to prepare them (baking, boiling, grilling, microwave, steamed), you can serve them in soups, salads, side dishes, appetizers and in main dishes. I decided to turn my Onion Medley BBQ Ready Kit into an entree salad. We love potato salad, but I wanted to create something that could pass as a main dish. Paired with tender juicy steak and greens, this salad is a great and simple weeknight meal.

Steak and Potato Salad

1 Little Potato Company BBQ Ready Kit (I used Onion Medley)
1 (6-7oz) steak (I used cross rib steak)
2 C green leaf lettuce, washed and chopped
1/2 C balsamic vinegar
3 Tbs honey
pinch of salt and black pepper
3 Tbs olive oil
chopped green onion for garnish

Preheat grill.

Prepare the Creamer potatoes according to package directions. Once cooked, remove from grill to cool slightly.

Season steak with desired seasonings (ours came pre seasoned). When Creamer Potatoes have 20 minutes of cooking time remaining, grill the steak to desired doneness. I like Medium-Well so I cooked my steak for 5 minutes on the first side, and for 8-10 minutes on the second side. Remove from grill and let rest 10 minutes.

Place 1 C of lettuce onto a serving platter. Once steak has rested, thinly slice against the grain and place in a large bowl. Add in c Creamer potatoes, slicing larger ones in half. Add 1 C of chopped green lettuce, to the steak and potatoes. Toss with 1/2 of the dressing. Place dressed greens, potatoes and steak onto the lettuce on the platter and drizzle with remaining dressing. Sprinkle with green onion and serve.

Dressing: in a small skillet, bring the balsamic vinegar and honey to a boil. Simmer until reduced by half. Remove from heat and whisk in 3 Tbs olive oil. Season with salt and pepper and use immediately.

Great looking salad. I love steak salads, especially to get my husband on board w/ salad for dinner. I haven't tried these potatoes yet, but I love that they are in their own tray. I waste more foil making packets!
