Sausage, Creamer Potato & Egg Skillet

Creamer potatoes are the star in this deliciously hearty skillet meal, which can be eaten for breakfast, lunch or for a quick dinner.

Boy it's almost the end on October already and time seems to be flying by. Especially now that I am working. I'm still trying to find a good balance between work, which is exhausting, and being a single mom. Most days when I'm done work, I really don't feel like cooking. I don't however want to rely on pre packaged foods or take out, so I have to come up with some quick healthy and hearty dinner ideas.

When thinking of meal ideas that are both healthy and filling, I reach for Creamer potatoes from The Little Potato Company. Creamer Potatoes are truly a perfect part of a healthy balanced diet. Which makes them perfect for quick dinners. I knew I could throw together this delicious skillet dinner in the matter of minutes, using these Microwave Ready packs.

My kids never turn down breakfast for dinner, so I knew this recipe would be a hit. I crumbled up my breakfast sausage and combined it with a few veggies and the perfectly steamed Creamer potatoes. Add in a few eggs and you have a healthy, delicious and super simple dinner, sure to please even the pickiest eater.

Sausage, Creamer Potato & Egg Skillet

1 pkg breakfast sausage links, casings removed
1 pkg Savory Herb Microwave Ready Fresh Creamer Potatoes
1 large leek, sliced and washed
1 C mushrooms, sliced
3-4 eggs
salt and pepper

Cook Creamer potatoes according to package directions.

Preheat oven broiler.

In a large oven proof skillet brown the sausage, over medium heat, breaking up any big pieces. Add in the leeks and mushrooms and cook until mushrooms soften and begin to brown.

Carefully remove the plastic covering from the tray of Creamer potatoes, and add them to the skillet, along with the accompanying season packet. Gently mash the potatoes with a potato masher and combine with the sausage mixture.

Make 3-4 holes in the potatoes and sausages, and break one egg into hole. Place skillet in oven and broil until whites of eggs are set; about 5-10 minutes. Using a oven mitt, remove skillet from oven and serve.
