Cheesy Creamer Potato Casserole

Tender Creamer potatoes are baked in a cheesy sour cream sauce, for a delectable side dish. Perfect to ring in the New Year.





Merry Christmas and Happy New Year everyone! This new year's eve, we will be celebrating with my parents. Something I haven't done in many years. I am glad to have people to cook for and this Creamer potato side dish, is perfect for any special occasion. 

I actually made this for Mom and Dad last night and both Mom and Mr.B were arguing about who would be having the leftovers today. They were crazy good! The creamers were perfectly cooked and not mushy, and they took on the flavour of the cream sauce in which they baked. 




The thing I love most about these Creamer potatoes, from The Little Potato Company, is their thin skins. You wouldn't have even known these potatoes still had their skins on them. Packed full of vitamins, minerals, antioxidants and fibre, Creamer potatoes are naturally gluten free, cholesterol free and easy to digest. So you can feel great about serving your family and guests Creamer potato goodness. 

For this dish, I decided to use the Terrific Trio varietal. I love the combination of the blue, yellow and red potatoes, that are smooth and buttery, sweet and earthy and vibrant in colour. Sure to make your guests say WOW, when you bring this dish to the table.




Cheesy Creamer Potato Casserole

1 (1.5 lb) bag Terrific Trio Creamer potato varietal
1 onion, chopped
1 C prepared French Onion Dip
1/3 C mayonnaise
1 tsp coarse sea salt
1/2 tsp pepper
2/3 C marble Cheddar cheese, shredded

Preheat oven to 375 degrees F. 

Cut the bigger Creamer potatoes into quarters and place into a mixing bowl. Add in the chopped onion, French Onion Dip, mayonnaise and 1/3 C marble Cheddar. Season with salt and pepper and mix to coat completely. 

Place Creamer potato mixture into a 2 qt baking dish and sprinkle with remaining 1/3 C marble Cheddar. Cover and bake until potatoes are fork tender; about 30-45 minutes. Uncover and cook an additional 10 minutes to brown the cheese. 

Let rest 10 minutes before serving.
