The kids and I have been busy this past weekend, putting up the tree and decorating the house. I can't believe that it's the holiday season already. This year has flown by! I just wish I could hit the pause button for a little bit, LOL. But now, it's time to PARTY!!!

Creamer Potato & Ham Soup

Creamy, tender Creamer potatoes are the star in this lusciously hearty soup, perfect for the cold weather.

Wow the end of November is right around the corner. As the year goes on, I feel like days are going by more quickly. Now that the cold weather has made it's way to Ontario Canada, I am ready for comfort food. When the mercury drops, I get into soup mode. Once Fall and Winter hit, I make soup at least once a week. It's a great way to warm up and most soups come together in a snap. Especially when using Creamer potatoes, from The Little Potato Company.

I can not tell you how much I love these little potatoes. My kids don't mind their thin skins, which add so much nutrition to any dish I make. I loved that I didn't have to peel potatoes to make this potato soup. Even the potatoes I pureed to thicken the soup, were un peeled; and my kiddos didn't even complain. I felt good that they were getting potassium, vitamin C and vitamin B6. All much needed, especially with cold and flu season.

This soup looks creamy and luxurious, but let me tell you, there isn't one drop of cream in it. I used low fat milk and chicken broth, and thickened it with a roux and pureed Creamer potatoes. Which makes this silky smooth and creamy soup very figure friendly. We all know that we add a few pounds during the holidays, with the sweets and treats, but this soup can make you feel good about indulging in something so delicious. I used The Little Potato Company's Blushing Belle varietal, to add a great pop of colour in our soup.

Creamer Potato & Ham Soup

3 Tbs olive oil
1 onion, chopped
2 carrots, peeled and chopped
1- 680g bag The Little Potato Company Blushing Belle Creamer potatoes
1 bay leaf
1 1/2 tsp dried thyme
1/4 C flour
6 C chicken broth/stock
2 1/2 C low fat milk (I used 2%), divided
1 tsp coarse sea salt
1/4 tsp fresh ground pepper
2 C cooked ham, chopped

In a dutch oven or soup pot, over medium heat, heat the olive oil until it begins to ripple. Add in the onions and carrots, and season with salt, pepper, thyme and bay leaf. Cook until the onion becomes translucent; about 5 minutes.

Place 6 Creamer potatoes in a microwave safe dish and poke each one with a knife. Cook in microwave for 4 minutes; until fork tender.

Sprinkle onions and carrots with flour, stirring to coat the vegetables in the flour. Cook 3 minutes, before slowly whisking in the chicken stock. Bring to a boil and reduce heat.

Cut remaining Creamer potatoes into quarters and add to the soup pot, along with the chopped ham. Simmer for 8-10 minutes; until Creamer potatoes are fork tender.

Using a food processor, puree the microwaved Creamer potatoes with 1/2 C milk; until smooth and creamy.

Once Creamers are tender, whisk in the remaining milk, and pureed Creamer potatoes; whisking until the soup is smooth.

Remove the bay leaf, before serving.

Holiday Creamer Potato Medley~ Introducing NEW Chilean Splash Creamer Potatoes!

Creamy, buttery Creamer potatoes are roasted with sweet potato, Brussels sprouts, parsnip and bacon, in this show stopping dish perfect for the holidays!

Thanksgiving here in Canada has come and gone, and we are now gearing up for the Christmas season. The first snow of the year has fallen, Christmas music is playing on the radio and it's beginning to look and feel like the holiday season. So, when I was asked to write a recipe using The Little Potato Company's NEW Chilean Splash Creamer potatoes, I knew it had to be a dish I'd be proud to have on my holiday table.




These Chilean Splash Creamers are I think the most fun varietal that The Little Potato Company has produced. Bred in the Chilean Andes, their cream skins have a fun splash of purple, which adds gorgeous colour to any dish. Buttery and creamy, like the remaining varietals of Little Potatoes, they are sure to be a crowd pleaser this holiday season.

When deciding on a holiday dish, I knew I wanted this dish to be bursting with colour and fall flavours. Queenie is a HUGE fan of Brussels sprouts, which add a gorgeous green earthiness to the dish. When I think holidays I think cranberries and sweet potatoes, so of course those are making an appearance; AND who can say no to bacon? This is a side dish your guests are sure to love, plus the WOW factor is through the roof!


Chilean Splash Creamer Potatoes from The Little Potato Company


Holiday Creamer Potato Medley

1- 600g bag Chilean Splash The Little Potato Company Creamer potatoes
2 large sweet potatoes, peeled
1 parsnip, peeled
15 Brussels sprouts, trimmed
1- 375g pkg thick cut bacon
3 Tbs melted butter
1 Tbs onion seasoning
1 1/2 tsp dried thyme
coarse sea salt & fresh ground pepper
1 C dried cranberries


Preheat oven to 400 degrees F.

Cook bacon in a skillet over medium heat; until browned, but not crisp.

Cut Creamer potatoes and Brussels sprouts in half and place in a 13x9 inch baking dish.

Cut sweet potatoes and parsnip into 1/2 inch pieces and add to the baking dish.

Add the cooked bacon, along with it's drippings and melted butter, to the baking dish, and toss to coat.

Season everything with onion seasoning, thyme, salt and pepper and toss to coat.

Bake in oven for 15-20 minutes; until Creamer potatoes are fork tender.

Remove from oven and add the dried cranberries, tossing to combine.

Place onto a serving platter and enjoy!

Cinnamon Swirl Pumpkin Bread

A succulent pumpkin loaf is swirled with a sinful layer of cinnamon sugar and pecans, for a dessert that screams of Fall.

I love pumpkin dessert. Unfortunately I'm the only one in the house who does. So I don't bake with pumpkin as much as I'd like to. The last thing I need it to eat a whole dessert to myself, LOL. But when I made pumpkin pie last month, I froze the leftover pumpkin. I wasn't too sure what I wanted to make with it, but remembered a recipe I had seen for Pumpkin Cinnamon Swirl Bread. I LOVED the Cinnamon Roll Pound Cake I made earlier this year, so decided a pumpkin version would be equally as good, if not better.

This sweet bread is fantastic! I was worried about drying it out, since it didn't want to cook in the center, but after covering it with foil (so the pecans wouldn't burn), it cooked up beautifully and was not dry at all. I love the extra pop of sweet cinnamon goodness, mixed with the earthy flavour of the pecans. Such a great pairing with pumpkin. I brought some in to work to share with the staff, so I wouldn't have to eat it all.

Cinnamon Swirl Pumpkin Bread

1 C pure pumpkin puree
2 eggs
1 C sugar
1/2 C canola oil
2 C flour
2 tsp pumpkin pie spice
2 tsp baking powder
1/2 tsp salt

Cinnamon Pecan Swirl
1/3 C sugar
1 tsp cinnamon
1/3 C chopped pecans

Preheat oven to 325 degrees F. Grease a large loaf pan well with shortening, or spray generously with cooking spray.

In a bowl, combine 1/3 C sugar, cinnamon and chopped pecans. Set aside.

In a large mixing bowl, beat together the pumpkin, eggs, oil and sugar; until smooth. In a separate bowl, whisk together the flour, baking powder, salt and pumpkin pie spice.

Add the dry ingredients to the wet ingredients and mix until just combined. Pour half the batter into your prepared loaf pan and sprinkle with two thirds of the cinnamon pecan mixture.

Pour remaining batter into the pan and smooth out the top. Sprinkle with remaining cinnamon pecan mixture; lightly pressing pecans into the top of the loaf.

Bake for 50-60 minutes; or until a toothpick inserted in the center comes out clean. Cover with foil half way through baking if pecans begin to brown too much.

Let cool in pan for 10 minutes, before removing to a wire rack to cool.

Hello! I hope you've all been well. I've been super busy with work, but and starting to find it easier to be a working mom. Returning to the work force after 14 yrs has been a big change for all of us, but I think we are handling it best we can. Having a place to find inspiration for quick and easy recipes has been a god send, so thank you to everyone who comes by to share your deliciousness with us!!!

Simple Supper Tuesday #133

Happy November!!! Wow I can not believe how quickly this year has gone by! It's a bit scary at times. We had a super fun Halloween, despite the rain. My Mother in law came to visit and braved the cold and rain with the kids, while I stayed home to hand out treats. The kids didn't last very long though and we have a TON of candy leftover. I need to figure out who I can donate it to, LOL.
