Cheesy Creamer Potato Casserole

Tender Creamer potatoes are baked in a cheesy sour cream sauce, for a delectable side dish. Perfect to ring in the New Year.





Merry Christmas and Happy New Year everyone! This new year's eve, we will be celebrating with my parents. Something I haven't done in many years. I am glad to have people to cook for and this Creamer potato side dish, is perfect for any special occasion. 

I actually made this for Mom and Dad last night and both Mom and Mr.B were arguing about who would be having the leftovers today. They were crazy good! The creamers were perfectly cooked and not mushy, and they took on the flavour of the cream sauce in which they baked. 




The thing I love most about these Creamer potatoes, from The Little Potato Company, is their thin skins. You wouldn't have even known these potatoes still had their skins on them. Packed full of vitamins, minerals, antioxidants and fibre, Creamer potatoes are naturally gluten free, cholesterol free and easy to digest. So you can feel great about serving your family and guests Creamer potato goodness. 

For this dish, I decided to use the Terrific Trio varietal. I love the combination of the blue, yellow and red potatoes, that are smooth and buttery, sweet and earthy and vibrant in colour. Sure to make your guests say WOW, when you bring this dish to the table.




Cheesy Creamer Potato Casserole

1 (1.5 lb) bag Terrific Trio Creamer potato varietal
1 onion, chopped
1 C prepared French Onion Dip
1/3 C mayonnaise
1 tsp coarse sea salt
1/2 tsp pepper
2/3 C marble Cheddar cheese, shredded

Preheat oven to 375 degrees F. 

Cut the bigger Creamer potatoes into quarters and place into a mixing bowl. Add in the chopped onion, French Onion Dip, mayonnaise and 1/3 C marble Cheddar. Season with salt and pepper and mix to coat completely. 

Place Creamer potato mixture into a 2 qt baking dish and sprinkle with remaining 1/3 C marble Cheddar. Cover and bake until potatoes are fork tender; about 30-45 minutes. Uncover and cook an additional 10 minutes to brown the cheese. 

Let rest 10 minutes before serving.

MERRY CHRISTMAS everyone!!! I can't believe Christmas is in 4 days. Our lack of snow this year makes it feel a little less like Christmas, but the kids and I are excited. The rest of the week will be spent doing fun Christmas activities like making a gingerbread house, going to a local candy shop for a movie night complete with gingerbread and cupcake decorating, visiting a local tree farm for some Christmas fun. The last few months have been very difficult for me and my children, and I am trying my best to build new memories and traditions for them. But enough chatter..... it's time to PARTY!!!

Grinch Salad

A super fun mixture of pudding, whipped cream and marshmallows transform themselves into a Grinch-y watergate salad. A fun way to celebrate the holidays!




Christmas is less than two weeks away! Is it just me, or is time just flying by? Now that I work, I find that days and months are just passing us by. The next week or so will be spent wrapping gifts, baking and getting ready for Christmas. The kids and I have already been enjoying some Christmas themed outings and they've enjoyed helping with Christmas baking this week. AND let's not forget that we've been watching Christmas movies. Some of our favourites are ELF, The Santa Clause and of course The Grinch Who Stole Christmas.

Last week as we talked about which Christmas movie we should watch later that evening, I decided to try making a Watergate salad, adding a bit more green food colouring and a cherry for the Grinch's heart and calling it Grinch Salad.

I've always been intrigued by these kind of dessert salads, that incorporate pudding, marshmallows and fruit. So a themed movie night seemed like the perfect way to try one out!




Grinch Salad

1 (4 oz) box Instant Pistachio Pudding
1 (14.5 oz) can crushed pineapple
1 1/2 C mini marshmallows
2 C thawed cool whip
2-5 drops green food colouring
Maraschino cherries, well drained

Pour crushed pineapple, with juice, into a mixing bow and combine with the pistachio pudding. Stir in mini marshmallows and fold in the cool whip; until well combined. Add 2-5 drops (depending on how green you'd like it) of green food colouring and fold to combine. Refrigerate 1 hr before serving.

Drain maraschino cherries on a paper towel. Using a small pairing knife, cut a small V out of the top of each cherry, turning it into a heart.

Serve Grinch Salad in small bowls and garnish with a cherry 'heart'.

Happy Monday!!! We are busy getting ready for Christmas and the kids have one week left before Christmas break. I've been busy baking for Christmas platters I will be giving as gifts to teachers, neighbours and friends. We haven't any snow yet, and to tell the truth I'd be OK with a green Christmas this year, LOL.

Gingerbread Cupcakes with Brown Sugar Cream Cheese Frosting #Baker'sSecret

Tender cupcakes bursting with warm gingerbread spice are topped with a fluffy brown sugar cream cheese frosting.



Well it's December and I'm not sure my life can get any busier. With Christmas only a few weeks away, the kids have been asking to make some Christmas desserts. We found these cute little gingerbread man sprinkles at our local bulk store and Queenie just had to have them, LOL. So we decided to make some gingerbread cupcakes and use them as garnish.




I've always loved to bake and I have the cake pans, cookie sheets and loaf pans to prove it. The problem is finding a way to store them, so they all fit nicely and don't make a mess when trying to take what I need out. That's why when I had the opportunity to try Baker's Secret new 5 piece Baker’s Secret Easy Store Set, I was extremely excited. I wanted to see how I could store 5 pieces in one little space saving set. Could it really help with locating the pans I needed to bake and would it help me stay more organized? 





I have to say YES!! I love how this set takes up only a small space in the drawer beneath my stove, yet it contains 5 essential baking pans. One 6 count muffin tin, a 4x8 inch medium loaf pan, an 8 inch square pan, a 9x13 inch cookie sheet and a 9x13 inch cake pan. Each piece has a non stick, metal spatula safe, coating and they all nest into one cute little compact space saving bundle. The pans also come with a lifetime warranty, which I think is fantastic!

Gingerbread Cupcakes with Brown Sugar Cream Cheese Frosting

1/2 C butter, at room temperature
1/2 C firmly packed brown sugar
½ C molasses
1 egg
1/2 tsp vanilla
1/2 C boiling water
1 tsp baking soda
1 1/2 C flour
2 tsp cinnamon
1 tsp ginger
1 tsp cloves
1/4 tsp salt


Brown Sugar Cream Cheese Frosting
2/3 C cream cheese, room temperature
1/2 C butter, room temperature
1/2 C brown sugar
5 C powdered sugar
3 Tbs milk (more if frosting is too thick)


Preheat the oven to 350 degrees F and line muffin tin with paper cups.
Cream together the butter and brown sugar in a large mixing bowl until light and fluffy. Beat in the molasses, egg, and vanilla. In a small bowl, stir together the boiling water and baking soda until dissolved. Stir the water mixture into the molasses mixture.
Sift together the flour, cinnamon, ginger, cloves, and salt into a separate bowl. Whisk the flour mixture into the molasses mixture until combined.
Using a medium cookie scoop, scoop the batter into the prepared muffin cups. Bake the cupcakes for about 20 minutes; until a toothpick inserted in the center comes out clean. Remove from the oven and allow them to cool for 5 minutes before transferring them to a wire rack to cool completely.
Frosting- In an electric mixer fitted with the paddle attachment, cream together the cream cheese and butter until fluffy.  Mix in the brown sugar and cinnamon. Gradually add in the confectioners’ sugar, 1 cup at a time. Add in the milk and beat at high speed for 5 minutes; adding more milk if frosting is too thick. Frost cooled cupcakes and sprinkle with gingerbread sprinkles if desired.
